It wasn't today... I'm a little behind.
As I gathered my tray, my silverware and my napkin I had NO idea what was for lunch. That is not unusual when staying here at the seminary in Quito, Ecuador. The menu is a mix of Ecuadorian, Columbian, and North American foods. It is always good!
First I received my plate and I could immediately see that it was a dish I had tasted on my first visit to Quito. Cow stomach in a tasty cream sauce, yummmm. This is not the official name for the dish but it describes it perfectly! It actually does have a great taste, but it is the look and texture of the small pieces of cow stomach that are the issue. I assure you it is more mental than anything else. I picked up my juice while I waited for my soup.
My soup arrived on the counter and as I took into my hands and placed it on my tray I noticed there was some kind of meat in the soup. On closer inspection I saw three little pieces sticking out of the soup… yes, I was going to have Chicken feet soup! Yummm As I sat down at the table I told Gail that today for lunch was “culture” day! Then I prayed and asked the Lord to help me eat this wonderful food that had been provided for me. The soup was delicious… but I didn’t eat the feet.
So the answer to the question...“Guess what I had for lunch today?” Cow Stomach in a tasty cream sauce and Chicken feet soup. You just can’t make this stuff up!

Oh, Kim, what a privilege it is to call you friend. I'm not sure that I could be so gracious under pressure. Jerry and I going to Argentina in June for Extreme. I see that you have a very busy schedule. We would really like to see you when you come back to the States next time. Until then, we will continue to pray.

Hi Kimi K! Ok. So, I'm not sure how you do it. I don't think I would have been able to eat. Cow stomach and chicken feet? I'm going to remain thankful for hamburgers and drumsticks. But, I guess it comes down to eating or going hungry, right? And, would it be rude not to eat?
I sure do miss you and can't wait for you to be home again.
